The Latest of my designs is this all around kitchen tool. While being inspired by the idea of a frontier kitchen, I wanted to create a knife that has a heavier hand or feel. The hand ground 2 degree bevels bring the tough 1/8" thick spine down to a thin edge which is then ground at a final 17 degrees per side. This knife will lend a hand as is glides without wedging and holds its high carbon steel edge.
80crv2 high carbon steel has higher carbon. Edge retention, toughness, and fine grain structure make this cutlery steel a top choice for home and commercial cooks. My high carbon knives will tarnish but will also build a beautiful patina over time. Decorated with a walnut wood handle that is made to stand the test of time, bone color liner and copper hardware. A tough knife is a high priority for the knives i send out the door. Does Not Include a Sheath
